India needs national iconic dosa brands, biryani brands etc. More power to Benne! Paradise and thalappakatto are slowly trying the biryani thing. Nailing down process and repeatability are key here and I so look forward to these going global too.

@deepakshenoy Paradise and Thalappakatti are doing the hard work on biryani. Hope more founders treat dosa/biryani the way McDonald’s treated the burger: nail repeatability without killing the soul. India has the product; we just need the systems.

@deepakshenoy I say more power to individual outlets serving their authentic recipes. I am not a big fan of institutionalization of what are primarily small businesses. Call me old fashioned.

@deepakshenoy I don't think any of the small businesses (retail) will survive in the next 15 years Deepak, particularly in the cities.

@rajeshlalwani Small restaurants? Will survive for sure, will see the exiting ones replaced. It's an evergreen sector just populated by different players and some iconic names like veenas etc
