宋人的「点汤逐客」:一碗汤里藏着送客令 现代人请人离开,要说"下次再聊"。宋代人更直接——端起一碗汤。朱彧《萍洲可谈》记下一句被全宋遵守的规矩:"客至则啜茶,去则啜汤。"客人进门上茶,客人要走上端汤。这"汤"不是今天的羹汤,而是甘草、药材煮的饮品,有时就是白水。 这套"茶进汤出"的礼数,普及到什么程度?朱弁《曲洧旧闻》说:"上自官府,下至闾里,莫之或废。"从皇宫到农家,全国统一执行。更妙的是,宋人后来把"点汤"玩出了潜台词——变成逐客令。魏泰《东轩笔录》记了个故事:官员胡枚想求见宰相陈升之,陈不想见,直接喊一声"索汤",下人立刻端汤上来,胡枚只好起身走人。 茶是留,汤是送,一碗之间,主客都体面。宋人待客还有"三不点"的讲究:泉水不甘不点,茶具不洁不点,客人不雅不点。普通客人喝盏茶走人,知己好友才能看上一场"茶百戏"——用茶筅击拂出雪白沫饽,再用茶匙在泡沫上画出山水花鸟,是宋人的拉花艺术。 点汤的汤瓶是有讲究的:夹层保温,瓶嘴细长,能精准点到茶杯里不溅出来。夜市三更还有"提瓶卖汤者",专给深夜归家的人送一碗热汤暖身。一个"汤"字,白天是礼数,夜里是温情,端起来是送客,放下去是体面。 宋人的高明,是把"我想让你走"说得像"我关心你"一样好听。中国人最怕伤面子,于是发明了一套用汤碗代替直说的语言——不是虚伪,是给彼此留余地。今天我们有了"改天约",宋人用的是"请喝汤"。礼数的本质从来不是规矩,是把别人的感受放在自己嘴边之前。

@sunday77985 This detail is brilliant. The Song people also had a saying, "adding salt or medicinal herbs to the soup," which was a way of urging guests to hurry up, even more ingenious than simply serving the soup.

@sunday77985 Tea was used to keep guests, and soup was used to send them off. People in the Song Dynasty even designed a process for dismissing guests, which was much more efficient than the modern "let's meet again when we're free".
